Scottish Honeyberry, Pink peppercorn & Rose

Have you ever seen a honeyberry? They look like an elongated blueberry. They only last a couple of days when picked, so they have to be freeze dried straight away. They are an edible honeysuckle, and called Haskappu in Japanese, which means “little present at the end of the branch”. They are absolutely packed with health benefits, and are incredibly high in vitamin C. The Japanese call them “The berry of longevity”.

We sourced lots of organic Scottish honeyberries, from only a few miles away. And added them to our organic apple cider vinegar, and blossom honey. The colour is fabulous! Thinking about the health benefits in nature, and flavours that would work well with honeyberries, we then added crushed pink peppercorns, and rose petals. The combination is warm, mellow and delicious. The flavours work beautifully together.
